Brewery Name: Whiplash Beer
Beer Style: Belgian Quadrupel
ABV: 11.1%
Brewed In: Ballyfermot, Dublin, Ireland
Today’s beer is a bold, expressive Belgian Quadrupel from Whiplash — a style known for deep malt character, rich fruitiness and warming strength. Quad of Paradise is built on a dense base of Pilsner and Vienna malts with a large portion of caramelised Aromatic Malt, creating a luxurious backbone of dark fruit, toffee and spice. Magnum hops provide gentle balancing bitterness, while Grains of Paradise are added late in the boil for a subtle peppery, warming lift.
Appearance: Deep amber to mahogany with ruby highlights. A dense, off-white head forms with slow, steady carbonation.
Aroma: Dark fruit (fig, plum, raisin), caramel, toffee and soft spice. A hint of peppery warmth from the Grains of Paradise rounds out the nose.
Flavour: Rich caramel and dark fruit lead, followed by layers of toffee, dried berries and a touch of warming spice. The sweetness is full but well-balanced by gentle bitterness, keeping the beer structured rather than heavy.
Mouthfeel: Full-bodied and warming with smooth carbonation. Luxurious, rounded and lingering — a proper winter sipper.
A decadent mid-Advent beer designed for slow enjoyment, offering warmth, richness and depth in every sip.
About the Brewery: Whiplash Beer
Whiplash Beer was founded in Dublin by Alex Lawes and Alan Wolfe, quickly becoming one of the most recognisable independent breweries in Ireland. Originally operating on borrowed tanks and a patchwork of brewing spaces, Whiplash eventually moved into their own production facility in Ballyfermot, where they now run a dedicated brewery focused on precision and modern brewing techniques.
Best known for soft, expressive IPAs and bold stouts, Whiplash also excel when they branch into bigger, malt-forward styles like Quadrupels. Their approach is rooted in technical skill and attention to detail: water chemistry, yeast management, fermentation control and careful selection of malt and hops all play a key role in shaping their beers.
Quad of Paradise showcases this well. Built from a multi-layered malt bill and guided by the expressive nature of Belgian yeast, it delivers complexity and depth without ever tipping into heaviness. It’s a beer that demonstrates both Whiplash’s respect for traditional styles and their ability to elevate them through thoughtful recipe design.

Style Spotlight: Belgian Quadrupel
Belgian Quadrupel is one of the richest and most complex styles in the Belgian monastic tradition. Developed as a stronger, maltier sibling to Dubbels and Tripels, Quads are known for deep fruitiness, warming alcohol and luxurious sweetness.
Key Characteristics:
- Dark fruit flavours: raisin, plum, fig, date
- Caramel, toffee, dark sugar and spice
- Full-bodied, warming finish
- Elevated ABV (usually 9–12%)
- Yeast-driven fruity esters and gentle phenolics
While originally associated with Trappist brewing, modern breweries around the world — including Whiplash — have embraced the style, adding their own interpretations through malt complexity, hop selection and fermentation profiles.
