Brewery Name: To Øl
Beer Style: Double New England IPA (DIPA)
ABV: 8.7%
Brewed In: Copenhagen, Denmark

Tasting Notes

Today’s beer is #DIPA, a big, hazy and intensely aromatic Double New England IPA from To Øl. Brewed with Cascade, Citra and Simcoe, and layered on a silky base of pilsner malt, wheat and flaked oats, this is a proper Christmas Eve–Eve treat — juicy, hazy and full of bright hop flavour.

Appearance: Deep hazy golden-orange with a thick, creamy white head. Dense juice-bomb appearance with strong haze.
Aroma: Bursting with citrus, pineapple, mango and peach, backed by grapefruit rind, light pine and a soft floral note from Cascade.
Flavour: A wave of tropical fruit and citrus — think mango, orange, pineapple and peach — followed by a rounded sweetness from the malt and oats. Simcoe brings gentle pine and a touch of dankness, while Citra lifts everything with bright citrus. Bitterness is moderate, softened by the NEIPA style.
Mouthfeel: Smooth, pillowy and full-bodied with velvety carbonation. Warming finish with lingering citrus and soft bitterness.

A big, juicy hazebomb that still manages to stay balanced — the perfect high-impact beer as we move toward the final days of Advent.

About the Brewery: To Øl

To Øl (“Two Beers”) is one of Denmark’s most innovative breweries, known for bold, creative recipes and an uncompromising approach to flavour. Starting out as a gypsy brewery, they’ve grown into one of Europe’s most respected modern beer producers with a strong focus on hop-forward styles, mixed fermentation, bold adjuncts and clean, technical brewing.

#DIPA showcases To Øl’s signature approach: expressive hop character, silky mouthfeel and a carefully balanced malt base that supports intensity without heaviness. Their use of wheat and oats gives the beer its signature haze and pillowy texture, while the hop bill delivers layers of citrus, tropical fruit and pine.
